The short answer is: Not if you do it right.

The slightly longer answer: There are a few factors that contribute to loss of nutrients when cooking. Exposure to heat over a long time, for example, or using lots of water. It dilutes vitamins and minerals, and can destroy water-soluble vitamins. All B- and C-vitamins are water-soluble, for example, and you definitely want those!
